An Introductory Guide to French Pâtisserie and Desserts
On Earth (that is, the Earth populated by humans) the country of France is known for having the best pâtisserie and desserts. I'll start with the pâtisserie for now. If there is some sort of library here it will likely have more detailed information and recipes.
Pâte à choux is unleavened batter that puffs up in the oven due to its water content. Often they have cream piped inside and are glazed. The most common things made from this kind of dough are profitérole, or cream puffs. One of the most difficult desserts to make is the croquembouche, in which profitérole are arranged in a tall conical shape and bound with caramel threads. A simpler dish is the éclair, an oblong pâte à choux filled with cream and topped with icing.
Pâtes battues is leavened batter used for cakes and biscuits. One of the more well known examples is pâte génoise, an Italian sponge cake that is thin and light. Sweet roulade cakes such as the bûche de Noël (or yule log) use this cake, rolling it around some sort of filling. Another type of cake in this category is l'opéra, which uses a Joconde biscuit (a génoise makes with almonds) and layers of ganache and buttercream and covered in a chocolate glaze. Madeleine also use pâte génoise, and are very small cakes in the shape of a sea shell.
Pâtes friables are unleavened doughs, either sablée (“sandy”) or brisée (“broken”) used for pie and tart crusts. La pâte sablée is also known as shortbread, with which you may be familiar. La tarte au citron is a sweet tart made using lemon cream. Another well known tart comes from my home region, la tarte au me'gin, which is made with cottage cheese, cream and eggs. France is also well known for her savoury tarts, quiches.
pâte feuilletée is a laminated dough consisting of the dough, détrempe, and butter, beurrage. The tarte Tatin is a classic French tart that uses pâte feuilletée and caramelized apples. The tart is created upside-down, with the pastry on top, then turned back over before serving. Mille-feuille is also known at the Napoleon, and uses three layers of pâte feuilletée and two layers of cream. Palmier are pastry coated with sugar, then rolled and curled in the shape of a butterfly wing.
Finally, pâte viennoise are another leavened dough similar to bread. The most famous of the French baked goods fall under this category and are not necessarily regarded as dessert, though they are sweet. The croissant is a buttery, flaky pastry in a crescent shape, absolutely delicious and often eaten at breakfast with a large cappuccino. Brioche is an extremely rich bread made with pâte viennoise, and often has fruit or chocolate chips inside. Brioche has all sorts of variants, including gâteau des Rois or King Cake, and the tarte tropézienne, which is brioche filled with custard.
